Vanilla Cupcakes and Buttercream Frosting Recipe
Vanilla Cupcake Recipe

Yield: Makes 12 Cupcakes
Here is another recipe I tried from my saved Pinterest "recipes" board. Since I'm a beginner, this recipe was perfect for a novice baker like myself. This recipe uses basic baking ingredients that you probably have on hand. I didn't have cupcake liners (this is my first time making cupcakes) so I greased and floured the muffin pan I had from the yummy banana bread recipe.
Ingredients
1 cup white sugar
1⁄2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1⁄2 cups all-purpose flour
1 3⁄4 teaspoons baking powder
1⁄2 cup milk
Frosting Ingredients
3 cups powdered sugar
1/3 cup butter or margarine, softened
1 1/2 teaspoons vanilla
1 to 2 tablespoons milk
Directions
Preheat oven to 350 degrees F. and grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter.
Beat in the eggs, one at a time, then stir in the vanilla.
Combine flour and baking powder, add to the creamed mixture and mix well.
Stir in the milk until batter is smooth.
Bake for 30 to 40 minutes, or until golden brown and toothpick comes out clean.
Now, time for the frosting:
In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk.
Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar. Frosts 13x9-inch cake generously, or fills and frosts an 8- or 9-inch two-layer cake.
